Thai Red Curry Cod with Rice Noodles


Creamy baked haddock in a white wine, garlic and herb sauce served with rice, noodles or vegetables.

SERVES 1-2

Ingredients

  • Haddock (250g)

  • Salt and pepper

  • Paprika

  • Olive oil (1 tbsp)

  • Garlic (3 cloves)

  • Butter (10g)

  • White wine (1/2 cup)

  • Thyme

  • Dill

  • Heavy cream (1 cup)

  • Chicken stock (1 cup)

Method

  1. Season both sides of the haddock with salt, pepper and paprika.

  2. Heat up a pan on medium heat, melt the butter.

  3. Add half of the garlic and cook for 45 seconds.

  4. Add the white wine, thyme, chicken stock and heavy cream. Bring to a boil.

  5. Season with salt and pepper, add some dill, and bring the sauce back to a boil.

  6. Place the seasoned haddock into a baking tray, cover with olive oil and the rest of the garlic.

  7. Add the sauce into the baking tray.

  8. Bake at 400°F for 20 minutes.

  9. All done! Serve with your choice of rice or noodles.
